I followed this recipe, with these changes: 1 1/4 cup erythritol + 1/2 tsp. stevia instead of Swerve, and omitted the chocolate bars and frosting. I normally just use a wooden spoon to make brownies, but I found that beaters were necessary for this recipe. I’ll update with the results.

The avocados I bought at Costco on the weekend aren’t the best – even though they’re just barely ripe, the 3 I’ve opened so far have had brown near the stem end and some stringiness. Anyway, it’s a good time to use them in baking.
