Hardboiled eggs + homemade avocado oil mayo = yum. (I’ve always tried to make it with my stick blender in the past and I think I wasn’t blending it for long enough. Today, I made it on low in my BlendTec. It thickened beautifully. I didn’t measure – just blended a whole egg, a small spoonful of mustard, a couple spoonfuls of apple cider vinegar, and some salt then drizzled in oil until it looked about right.

I’m still trying to stay off vegetable oils, so hopefully this will become a regular thing.
