- For some reason cauliflower rice didn’t sound good to me until I read about coconut cauliflower rice.
- Cauliflower fried rice also sounds pretty great. (I’m waiting until cauliflower goes down in price – it’s $4.99 a head right now!)
- Tofu croutons (I love the idea of tofu as croutons – I’d plan on using an erythritol-xylitol blend and maybe just a drop of blackstrap molasses instead of sugar.)

- Peppermint patties (with blended xylitol and erythritol, and possibly a touch of guar gum instead of the cornstarch that’s normally in powdered sugar)

- I’ll have to keep an eye out for poblano peppers to try this recipe. (The farmer’s market has them in August, but otherwise they can be a bit hard to find here.)

- Low carb deep-fried onion rings (And, actually, I want to try a lot of the Low Carb and Lovin’ It recipes. I suspect that a lot of the recipes would be too sweet for me as-written (the recipe writers seem to love their splenda).

- Homemade sausage patties (I’m planning to make paleo English muffins and poach eggs to make a breakfast sandwich with these. I also want to experiment with freezing prepared sandwiches and microwaving them.)

- Sundried tomato and roasted garlic mayo (I also want to mix up small jars of wasabi mayo, sriracha mayo, and mustard mayo to keep in the fridge.)
