I followed this recipe, with these changes:

  • I didn’t have any no sugar added chocolate, so I melted 3 oz unsweetened chocolate with 1 oz salted butter and 2 oz VitaFiber syrup.
  • I skipped the topping.
  • I didn’t brush the sides of the pan with butter and didn’t have issues with sticking.
  • I didn’t have confectioner’s sweetener, so I just used a full cup of granular sweetener in the filling.

Great recipe! I ate my first slice warm, which isn’t the best for a cheesecake’s texture. Can’t wait to have my next one after it’s fully cooled.
