I’m really enjoying this. Today, I had it with some tartar sauce – a kosher dill diced and mixed with mayonnaise.
2 Tbsp. butter
1 cup diced onions
1 diced red bell pepper
1 can tuna in olive oil (undrained)
black pepper and salt
4 Tbsp. cream
4 oz grated cheddar
Fry the onions in butter until soft. Add the bell pepper and cook for a minute. Stir in the tuna including the oil it’s packed in, breaking up the pieces. Season well with black pepper and salt.
Meanwhile, whisk the eggs with the cream. Stir it into the vegetables. Sprinkle the cheddar on top. Bake for 15 minutes at 350 or until set.
