Take a package of frozen shredded pork skin. Pour boiling broth over it. Put the skin and broth back in the pan and heat until it’s back at a simmer. Season to taste with soy sauce, salt, and whatever acid you like – vinegar, lemon juice or lime juice. Stir in something spicy – I added a heaped tsp of my homemade chili sauce. Eat.

I left the broth for now and just ate the ‘noodles’. It was really satisfying.
