I hadn’t made this recipe in a while, but I decided I wanted some mini pizzas so I looked it up. The pizza isn’t something you can pick up to eat, but it tastes good. I recommend strongly flavoured toppings the coconut flavour isn’t noticeable.

Tonight, I had it with sundried tomato sauce (oil-packed sundried tomatoes simmered with fresh tomatoes and pureed), Italian salami, and mozzarella.

I’m not sure why I didn’t think to do this before, but this time instead of rolling out the dough, I flattened it using my tortilla/chapati press. Needless to say, it hasn’t seen much use since I went low carb. It’s fairly small, so I divided the dough into 4 instead of 3 as the recipe calls for. I might even be able to do 5.
