I roasted the chicken quarters, ate the delicious skin, then put the chicken quarters in the fridge to use in a recipe. I have my priorities! This is the recipe I came up with. It turned out nice and spicy from the pickled jalapenos.

bacon fat

2 onions, chopped

meat from 2 cooked large chicken quarters, coarsely chopped

3 bell peppers, diced

1 Tbsp. minced garlic

2 Tbsp. chili powder

1/3 cup chopped pickled jalapenos

2 cups diced tomatoes

salt and pepper

Fry the onions in bacon fat until tender. Add the garlic and chili powder and cook for a few more minutes. Add the meat, bell peppers, jalapenos, and diced tomatoes. Bring to a simmer. Taste and season with salt and pepper. Season for 30 minutes or until the chili is the consistency you like. Eat.
