This was inspired by this recipe. I used the middle of a giant head of cabbage whose outside I used to make coleslaw.

4 cups cabbage, thickly sliced

2 Tbsp butter

1 small onion, diced

1/4 cup chopped pickled jalapenos or more to taste

1/2 cup heavy cream

1/2 cup water

1/4 tsp guar gum

3 cups grated cheese

salt and pepper

Steam the cabbage. I did this in the microwave: put the cabbage and a bit of water in a 9×9 microwave and oven safe pan. Cover the pan and microwave for 5 minutes or until the cabbage is relatively tender. Drain.

Meanwhile, fry the onion in the butter until soft. Add the cream, water, and guar gum and bring to a simmer. Blend until smooth with a stick blender. Season to taste with salt and pepper. Add the jalapenos and 2 cups of the grated cheese, stirring until the cheese is fully melted.

Stir the cheese mixture into the cabbage. Sprinkle the remaining cheese on top.

Bake for 25 minutes at 350.
