Yum, yum. I had originally intended to make eggs in purgatory but I somehow don’t have tomatoes in any form other than tomato paste or ketchup. This alternative turned out really well.

2 Tbsp bacon fat

2 small onions, sliced

1 red bell pepper, chopped

4 oz Italian salami, chopped

3-4 oz grated cheddar

6 eggs

1/2 cup whipping cream

salt and pepper

Cook the onions in the bacon fat until tender. Add the bell pepper and salami and cook fora  few more minutes.

Preheat the oven to 350.

Meanwhile, beat the eggs with the whipping cream and some salt and pepper.

Combine the eggs with the salami mixture in a 9×9 pan. Sprinkle the cheese on top.

Bake the frittata for 30 minutes or until it’s puffy and cooked through.
