All of my meatloaves are inspired by Alton Brown’s Good Eats meat loaf. This one turned out particularly well.

1 kg ground beef

1 Tbsp. worcestershire sauce

2 Tbsp. bacon fat

1 carrot

2 small onions, skin removed and quartered

6 cloves garlic, peeled

1 red bell pepper, cored

2 eggs

2 tsp. salt (I actually used 1 1/2 tsp salt + 1/2 tsp mushroom seasoning)

1 tsp mustard powder

1 tsp smoked paprika

1 tsp ground black pepper

3/4 cup barbecue sauce, mine was homemade sugar-free

Chop the onions, garlic, bell pepper, and carrot in a food processor. Fry them in the bacon fat until tender. Add the salt, mustard powder, paprika, and black pepper and stir well. Set aside to cool.

Preheat the oven to 350.

Combine the eggs, ground beef, and worcestershire sauce with the cooled vegetable-spice mixture. Form the mixture into a loaf shape in a 9×13 baking pan.

Bake the meat loaf for 45 minutes, rotating the pan once. Remove the meat loaf from the oven and pour the barbecue sauce over it. Return it to the oven for about another 45 minutes or until the internal temperature is 160 degrees.

Serve.
