This turned out nicely. With this amount of sweetener, it’s not particulary sweet.

2 cups cold, strong coffee

12 drops sucralose

12 tablets saccharin

2 tsp. unflavoured gelatin

1 1/2 cups whipping cream

Combine the coffee, sucralose, and saccharin. Sprinkle the gelatin on top. Add the gelatin and let it hydrate for a couple minutes. Microwave the coffee until the gelatin dissolves, about 3 minutes. Put the coffee in the refrigerator until it begins to thicken, about an hour.

Whip the cream to stiff peaks. Fold it into the coffee. You’ll lose some of the bubbles but not all.

Put the mixture into the refrigerator and refrigerate a couple hours until the gelatin is set.
