1 lb mushrooms, quartered
4 plum tomatoes, quartered
2 zucchini, cut in fairly big chunks
2 small onions, thickly sliced
about 1/2 cup leftover hollandaise and/or mayo
salt and pepper
1 cup grated cheddar
Toss the vegetables with the bacon fat. Roast at 350, stirring occasionally, until everything is nicely browned.
If you’re using hollandaise, briefly microwave it until it’s melted enough to stir in with the eggs. It’s not a big deal if it curdles a bit.
Mix the eggs into the hollandaise or mayo. Season with salt and pepper. Add the vegetables.
Pour the mixture into a 9×9 pan. Sprinkle the cheese on top. Bake at 350 for 30 minutes or until set and the cheese is melted.
