This was my first time trying making hollandaise with my stick blender. I ate it with poached eggs and fried zucchini.

juice of 1 meyer lemon

1/2 cup salted butter

1 egg yolk

Put the lemon juice and egg yolk in a vessel not much wider than your stick blender. Blend them together. Heat the butter in the microwave until it is melted and very hot. With the stick blender running, slowly drizzle in the salted butter until it is all incorporated. Serve.

There were only 2 of us eating so we didn’t finish it all. I’ll mix the rest of it into a casserole this week.
