This turned out really well, although I wish I’d made a fatty sauce to go with it. The rest of the meats at the barbecue were too lean for my tastes and ended up dry.
6 boneless-skinless chicken thighs, cut into thick strips
3 cloves garlic, minced
1 tsp salt
2 Tbsp olive oil
1 tsp dried oregano
1/2 tsp ground pepper
juice of 1 lemon, I used a Meyer lemon
Combine all of the ingredients except the chicken thighs. Rub the mixture into the thighs. Let the chicken marinate in the refrigerator for a couple hours. Skewer the chicken. Cook on the barbecue until cooked through.
