This is great.

1 Tbsp. bacon fat

4 slices prosciutto, chopped

4 green onions, sliced

200 g frozen chopped spinach, thawed and squeezed

6 eggs

1/2 cup whipping cream

salt and pepper

1 cup grated cheddar

Preheat the oven to 350. Put the bacon fat in a 9×9 pan and put it in the oven until it melts. Tilt the pan until the bacon fat coats the bottom.

Whisk the eggs with the whipping cream, some salt and pepper, the spinach, green onions, and proscuitto. Pour the mixture into the pan. Sprinkle the cheese on top.

Bake for 35 minutes until the frittata is set.
