I picked up a bone-in pork shoulder yesterday, cut out the bone and simmered it to make meat for the dogs, and then used the meat in this recipe. I used chipotle in adobo instead of the ancho chiles, omitted the vegetable oil, and used canned tomatoes. Normally, I’d use another type of fat instead of the vegetable oil, but since pork shoulder has a fair bit of fat I just started it frying with fat side down. Plenty of fat rendered to brown the meat.
