I’ve had this for breakfast the last couple days and really enjoyed it: Heat some bacon fat in a frying pan. Add 3 slices bacon. (I bake my bacon a package at a time, so the bacon is cooked but not crisp at this point.) After the bacon crisps, remove it to a plate. Crack 2 eggs into the pan. Scatter a few tablespoons of chopped kimchi on top. Arrange the bacon on top. Cover the pan and cook until the eggs are as cooked as you’d like. Season with salt and pepper. Eat.
