I had 120 g (2 cups) of peanut flour left, so I made 1 1/2 times this recipe. I rounded up and used 8 eggs. I used sucralose drops as the sweetener. I also added 1/2 tsp salt. Because peanut flour can be a bit clump-y, I blended everything in my BlendTec.

I had remembered this bread as not rising much, but the 1 1/2 loaf overflowed my bread pan. The bread is nice toasted with jam.
