This isn’t especially low carb and it’s lower fat than I’d prefer, but I made it for a friend who has gestational diabetes and is easing into a lower carb lifestyle. According to my calculation, it has 5 net carbs per 1/2 cup, which is better than commercial no sugar added yogurt. (And it tastes about a million times better.)
1 cup peaches, drained if canned or thawed and drained if frozen
1 L plain yogurt, I used Liberte 2%
24 drops sucralose, or another sweetener to equal 1/2 cup sugar
Dice the peaches and combine all the ingredients. Refrigerate for a while to allow the flavours to combine. Eat.
