I used the last of my paleo wraps to make antojitos for a party last night. They turned out well – softer than antojitos made with flour tortillas, but very tasty.

Combine a package of softened cream cheese with 3 pickled jalapenos, chopped, and 3 green onions, sliced. Spread some of the cream cheese on a paleo wrap. Sprinkle grated cheddar on top. Roll up the paleo wrap. I decided at this point that 1 paleo wrap made too small an antojito, so I spread cream cheese and sprinkled cheddar on a second wrap, then wrapped the second wrap around the first one.

After you’ve made as many as you’d like, wrap them in foil. Bake at 275 for 20 minutes or until heated through. Remove from the foil and slice into rounds. Serve.
