750 g cauliflower


salt and pepper

1 onion, chopped

1/2 cup beer

4 oz cream cheese

200 g grated cheddar

3 pickled jalapenos, chopped

Toss the cauliflower with melted butter and roast it until it’s tender.

Meanwhile, fry the onion in butter. After it’s tender, add the beer and the cream cheese. Stir until the cream cheese melts into the beer. Add the jalapenos, half of the cheddar, and a few tablespoons of butter. (Not very precise, but it seemed dry so I added some butter.) Stir until the cheddar melts. Season with salt and pepper.

Stir the sauce into the cauliflower. Top with the remaining cheese.

Bake until hot and bubbly then eat.
