I brought this to a friend’s house for dinner. We ate it with ribs. It was delicious.
750 g frozen cauliflower
cooking fat (I used olive oil)
salt and pepper
250 g cream cheese
3/4 cup sour cream or plain yogurt
3 onions, diced
1 Tbsp. grainy mustard
150 g grated cheddar cheese
Toss the cauliflower with olive oil and then roast at 400 for 30 minutes, stirring occasionally, until tender and slightly browned.
Meanwhile, heat some olive oil in a large frying pan and cook the onions until they’re tender and lightly caramelized.
Soften the cream cheese (I microwaved it) and then stir it with the sour cream, 1/3 of the cheddar, and the mustard. Combine the cream mixture with the hot cauliflower and onions. Season to taste with salt and pepper.
Pour the mixture into a baking pan and top with the remaining cheddar. Bake at 350 for 30 minutes or until bubbly and a bit browned.
