I made coconut milk the other day using dessicated coconut and saved the pulp in the fridge. I decided to add it to my sausage and it worked out well. It gives the sausage a bit of sweetness without adding sweetener.

2 1/2 lbs ground pork
1 lb pulp from making coconut milk
1 Tbsp. Fennel seed
1 Tbsp. Garlic powder
1 Tbsp. Paprika
1 1/2 tsp Black Pepper
1 1/2 tsp Sage
1 Tbsp. Salt
3/4 tsp Cayenne Pepper

Combine all ingredients and form into patties. Fry until browned on both sides and no longer pink in the middle, or freeze on a baking sheet before transferring to freezer bags.
