I made cookies tonight using this recipe. I didn’t have shredded coconut so I used coconut flakes, which I think worked nicely. I sweetened it with 4 teaspoons equivalent each of liquid cyclamate and liquid sucralose. (Because cyclamate and sucralose are twice as sweet as either alone, this is the equivalent of 16 tsp sugar, compared to the 6 tsp the recipe called for.) I also sprinkled some plain erythritol on top of each cookie. They aren’t particularly sweet – I might consider increasing the sweetener next time. They’re a bit dry, sort of like biscotti. I ate them with hot chocolate. I might add a teaspoon of vanilla next time. But I  like them.
