I picked up a package of Julian bakery paleo wrap a while ago and finally got around to trying them. (They have a long shelf life unopened.) I’m not sure this is the best application for them (I have 5 more wraps to figure out what is), but it was nice to have a quesedilla after so long. The edges of the quesedilla where there was less cheese were noticeably coconut-y, whereas toward the middle the coconut flavour was subtler.
2 paleo wraps
1/2 pickled jalapeno, minced
1/2 shallot, minced
grated or sliced cheese
Heat the fat in a frying pan. Add a paleo wrap. Scatter the jalapeno and shallot on top. Spread the cheese in a thin layer. Apply the second wrap. After the cheese has melted, flip the quesedilla and brown the other side. Serve with salsa.
