This turned out really well. This morning, I put some of it in my morning omelette, which was delicious.

750 g frozen cauliflower

1 onion, sliced

4 Tbsp butter

salt and pepper

200 g goat cheese

1 cup sour cream

Put the onion in a microwave-safe container and season it with salt. Microwave it, covered (I just used a plastic splatter cover), for 3 minutes. Remove it from the microwave, add some of the butter, and stir. Microwave 1-2 minutes at  a time, stirring in between, until it’s as caramelized as you’d like. Set aside.

Put the cauliflower in a microwave-safe casserole dish. Microwave it, covered, for about 12 minutes, or until it’s heated through.

Add the remaining butter, the onions, the sour cream, the cheese, and salt and pepper to taste to the cauliflower. Stir well and microwave for another 5 minutes. Eat.
