I found myself with only 2 eggs in the house and wanted to make bread. I followed this recipe, a rare low carb bread recipe that only uses 1. I used 2 Tbsp. psyllium and the optional 4 Tbsp. oat fiber.

The flavour is great – very buttery. I ate 2 fresh from the oven, one plain and one with egg salad. I have mixed feelings about the texture straight from the oven, but most low carb bread I’ve tried improves after cooling and sometimes toasting it.
