My parents sent me home with the turkey carcass with 1 breast intact. I removed the meat, simmered the bones in water for 24 hours, then strained the broth and made this soup. This makes quite a vegetable-y soup, but I like it that way.

8 cups turkey broth

4 carrots, peeled and diced

1 turnip, peeled and diced

2 bunches green onions, chopped

salt and pepper

2 cups turkey meat

Simmer the vegetables in the broth until they’re tender. Add salt and pepper to taste – it’ll take a fair bit of salt. Stir in the turkey meat and cook for a few minutes more. Serve.
