I’ve been making concentrated hot cocoa by mixing whipping cream with cocoa powder, salt, sucralose drops, and cyclamate liquid. Then I add about an equal volume of water and microwave it. The cocoa powder has a tendency to clump that even using a stick blender doesn’t prevent.
Today, I decided to mix it up in my Blendtec. The cream thickens like whipping cream, but it works just as well as a concentrate. And no clumps!
These proportions are approximate.
3 cups heavy cream
2/3 cup cocoa powde.
9 drops sucralose
2 1/4 tsp cyclamate liquid
Blend all ingredients together. Store in the refrigerator.
