I haven’t been eating many frittatas lately, but last night I decided to make one. This was pretty good. I do think I need an oven thermometer since I think my (very old) oven is running hot.

6-8 slices bacon, cooked and cut into 1″ pieces

4-6 small tomatoes, roasted and quartered

5 eggs

1/2 cup cream

salt and pepper to taste

freshly grated parmesan cheese

Combine the ingredients except the parmesan in an oven-safe container. Sprinkle the parmesan on top. Bake at 350 until puffy and lightly browned. Eat.
