I came reasonably close to following this recipe, except I used white wine, 1/2 tsp. guar gum instead of the cornstarch, erythritol instead of the sugar, coconut oil instead of the vegetable oil, and omitted the extra chiles. I also used way more pork – 1 1/2 lbs. Not great for the balance of flavours, but it made the recipe more of a meal. Omitting the extra chiles was very silly – it wasn’t spicy enough. It was otherwise OK, but definitely not my favourite version of eggplant and pork.
