2 Tbsp. coconut oil

1 large zucchini, cut in quarters lengthwise then sliced

Ever since I watched a movie about Chinese food in America, I’ve had a craving for chop suey. This really needed some meat – I’ll add some to reheated portions.

1 giant shallot (I’m not sure what was up with this thing – it was the size of a medium onion), minced

1 lb bean sprouts

1/2 tsp guar gum

soy sauce

1 tsp. chili garlic sauce

toasted sesame oil

Fry the shallot in the oil for a couple minutes. Add the zucchini and continue cooking until it begins to soften. Add the bean sprouts and chili garlic sauce and continue stirring and frying.

Meanwhile, combine the guar gum and about a tablespoon of sesame oil. Stir well. Add about 1/3 cup water and some soy sauce. Stir the mixture into the pan with the vegetables. Bring up to a boil, taste, add more soy sauce if necessary, then eat.
