I made these tonight. I used 1/16 tsp. stevia instead of the packets of sweetener and thinned out some homemade creme fraiche instead of the buttermilk. The mixture is quite thin so the pancakes are closer to crepes, but they taste good.

To top them, I made this syrup. I don’t really understand the purpose of the coconut oil and butter – I found it rose to the top and congealed in the refrigerator. I added a bit of salt and a bit of citric acid but otherwise followed the recipe.
