This is vaguely based on a baked chicken dip I made. It’s good, but it could use a strong flavour, like sundried tomatoes, olives, or jalapenos.

coconut oil or another fat

1 large zucchini, cut into large bite sized pieces

1 medium onion, diced

3 cloves garlic, minced

salt and pepper

1 jar marinated artichokes, quartered

1-2 cups cooked chicken, diced (I always prefer dark meat)

1/2 cup each creme fraiche and mayo (both homemade!)

grated mozzarella, I think about 150 g

Heat a couple tablespoons of coconut oil in a large pan. Add the zucchini, onions, and garlic. Cook for several minutes until the onion and zucchini soften. Add the chicken and artichokes and continue cooking. Stir in the creme fraiche and mayo. Season to taste with salt and pepper. Pour the mixture into an oven-safe pan. Top with mozzarella. Bake at 350 until the mozzarella is melted and browned in spots.
