I picked up maybe 1 1/2 lbs of jalapenos for $2 because they were a bit on the older side. Cutting off a few soft bits was no big deal. They’re not particularly spicy, which is an issue I’ve had with a lot of the jalapenos I’ve eaten lately.

coconut oil, melted

1 – 1 1/2 lbs jalapenos, sliced lengthwise and stems and seeds removed

8 oz cream cheese, softened

5 duck eggs

salt and pepper

grated cheese, I used monterey jack

Toss the jalapenos in the coconut oil and roast at 350 until they’re tender, about 20 minutes, stirring once.

Meanwhile, beat the cream cheese then beat in each of the eggs. Season with salt and pepper.

When the jalapenos are tender, add the cream cheese mixture and stir briefly. Top with cheese. Continue baking for 20-30 minutes or until the egg mixture is puffy and the cheese is a bit browned.
