It’s so good to be back to low carb baked goods. I followed this recipe, using coconut oil instead of butter and 1/4 cup each of granulated sucralose and cyclamate instead of the cup of sucralose. It turned out too sweet and a bit too dry. I think I’ll try 1/2 cup coconut oil, only 3 Tbsp. each of the sweeteners, and a shorter baking time next time. (I baked it in a pyrex pie pan for 25 minutes at 350.) To help with the dryness, I ate my brownie with coconut butter on top.
