I followed this recipe, using 1/3 cup erythritol instead of honey. (I’ve decided, for now, my autoimmune paleo will include erythritol.) I also added some ginger juice (fresh ginger, grated, its juice squeezed into the mixture and solids discarded) instead of the cloves. This wasn’t a great idea – the pudding curdled a bit. It still tastes good, though, and it’s nice to have something sweet.
