I bought avocados last time I was at Costco despite the fact that I keep not feeling like them when they’re ripe. They’d gotten a bit overripe, but they still tasted good, so I decided to make chocolate pudding with them.
100 g 85% cacao chocolate
coconut oil to taste, I used a few tablespoons
20 drops caramel stevia
a couple shakes salt
1 Tbsp. lemon juice (I don’t know why, but it tastes flat to me without the bit of acid)
flesh of 3 large avocados
Melt the chocolate with the coconut oil. Stir until smooth and let cool until it’s just warm. Add the remaining ingredients and blend with a stick blender until smooth. Eat.
