I followed this recipe, with water instead of almond milk and blending the mixture instead of mixing it in a bowl. (Because I find peanut flour can get clumpy.) The pancakes are amazing. I had my first one with 85% cacao chocolate melted between pancakes. I’m going to make some chocolate syrup (using 1/4 cup equivalent sucralose and 1/4 cup equivalent cyclamate sweetener) to put on my remaining pancakes.
