I didn’t follow any particular recipe, but this turned out pretty well.

  • 6 cups shredded red cabbage (or any kind of cabbage, really)
  • 1/4 medium onion, minced
  • 1/4 cup apple cider vinegar
  • 1/4 cup canola oil
  • 1/2 cup mayo
  • 1/2 cup sour cream
  • 2 packets monk fruit/erythritol sweetener, or 2 tsp. equivalent of any kind of sweetener (this is my first time adding a bit of sweetener to coleslaw, and I admit it makes a big difference)
  • 1 carrot, grated
  • salt

Put the onion in the cider vinegar while you grate the carrot and shred the cabbage.

Combine all of the ingredients. Add salt to taste. Eat immediately or refrigerate and eat within a few days.
