Today, I made the sesame seed crackers from Low Carb High Fat Bread. I used 1 1/2 Tbsp. of unsweetened shredded coconut instead of the NutraFiber flakes. They turned out great – lighter textured than the almond flour-based crackers I’ve made. They remind me of Stoned Wheat Thins, which my dad always ate with Velveeta cheese or peanut butter when I was a kid.
I may have to buy this book after the library stops letting me renew it 🙂
