I picked up some chicken quarters for 98 cents a pound at the Vietnamese market. (Why is chicken so inexpensive there? I know that the popularity of chicken breasts drives down the cost of chicken quarters, but it’s been a long time since chicken cost under $1 per lb. When I was in university, I could find chicken quarters for 79 cents a pound, but I graduated 11 years ago.)
Anyway, I baked them at 350 after seasoning them with this blend. Yum!
