I had some slightly sad looking cilantro and green onions, so I decided to use them to marinate some lamb. Adding some mint to the marinade would be nice, too.

1 kg lamb chops (I used inexpensive individually quick frozen chops)

1 bunch cilantro, torn into 4 lengthwise

3 cloves garlic

1 bunch green onions , roughly chopped

Oil

Apple cider vinegar

Pulse the garlic in a food processor. Add the onion and cilantro and continue pulsing. Add oil to loosen the mixture do that you can blend it smoothly. Add some apple cider vinegar, maybe a tablespoon, and blend it in.

Combine the lamb with the marinade and refrigerate overnight.

When you’re ready to cook the lamb, heat a grill or cast iron pan. Scrape off most of the marinade and season the lamb with salt and pepper. Cook, turning once, until the outside is browned and the inside is as cooked as you like.
