My new favourite cold meal – sliced cucumber and liverwurst. I’ve been eating 1/2 a large cucumber (~5 net carbs) with around 80 g of jalapeno liverwurst (~3 net carbs). I can’t wait to take it on picnics in summer.

It’s a good meal for me, in particular, since my low blood pressure means I don’t need to worry about sodium and I’m trying to get my iron up before my next blood donation. (100g of liverwurst has 50% of the RDA for iron.)
