I had a package of ground pork in the fridge but didn’t want to do anything as elaborate as this, so I made this cheater version of eggplant in garlic sauce. It tastes pretty good considering.

1 1/2 lbs ground pork

5 japanese eggplants (I peeled them because they were getting old), sliced

2 tsp. chile garlic sauce

4 cloves garlic, minced

1 Tbsp. chili bean sauce

soy sauce to taste

Cook the ground pork in a large frying pan or wok, breaking it up. After it’s mostly cooked, add the remaining ingredients except the soy sauce. Continue cooking for about 15 minutes, stirring frequently, until the eggplant is as tender as you’d like. Season with soy sauce and eat.
