This isn’t as low carb as it could be because of the arrowroot, but it tasted great. I’ll try guar gum next time. Based on this recipe.

  • 3 packets cyclamate sweetener
  • 2 Tbsp. generic Splenda
  • 5 teaspoons arrowroot
  • 1/8 teaspoon salt
  • 1 3/4 cups soy milk
  • 1/2 cup heavy whipping cream
  • 1/2 cup creamy (smooth) natural peanut butter
  • 1 teaspoon vanilla extract
  • 2 oz unsweetened chocolate

Whisk the sweeteners, arrowroot, and salt together in a pot. Whisk in the soy milk and heavy cream. Cook over medium heat, stirring frequently, until the mixture thickens. Remove from heat. Whisk in the peanut butter, vanilla extract, and chocolate. Scrape into a covered container and refrigerate until it’s fully cooled.
