I followed this recipe, with these changes: used 2 lb ground pork instead of the ground pork and beef, made it as a whole meatloaf instead of muffins, omitted the garlic, used almond flour instead of breadcrumbs, and omitted the parsley. It turned out great. Oddly, it was my first time using almond flour in meatloaf – it really improves the texture.
