I followed this recipe, substituting 1 cup erythritol and 1/4 tsp. stevia for the sugar. I ate some of it on top of a no-bake lemon cheesecake that turned out kind of bland. It tastes good, although I do think the erythritol will have a tendency to crystallize based on the fact that I detected a few crystals while the lemon curd was still warm.
