• 4 chicken quarters, divided into legs and thighs
  • 2 tsp garlic powder
  • 2 tsp ginger powder
  • 1 tablespoon garam masala
  • 2 teaspoons ground cumin
  • 1 tsp crushed chiles
  • salt to taste

Combine the spices. (I do this in a spice grinder since I don’t keep ground cumin around and it breaks up any clumps that form in the garlic powder.) Rub the spices all over the chicken pieces and marinate overnight. Heat the oven to 375. Arrange the pieces on a baking sheet. Sprinkle salt over them. Bake for 30 minutes then spoon any fat that accumulates on the baking sheet over the pieces and return to the oven. Continue baking until the chicken is cooked through, probably about an hour. Eat.
